I’m sure most of us are bored with the same old egg and toast or Upma, Poha for breakfast. These recipes are healthy but these are too common to have in breakfast. They become boring after some time especially for people working.

We wake up every day wanting something new but find it too much work in the morning. We have failed so many times in our attempt to make Instagram worthy breakfast spread, it’s just embarrassing now!

Also, these are worth a lot of calories and not that filling. Let it be the trend of mini pancakes cereal or the waffles with maple syrup. To be honest I’m not a fan of sweet breakfasts. Starting my day with tons of sugar and calories is not just how I roll. So, I decided to put together five healthy breakfast options to get a break from the boring everyday options. They all are easy to prepare, very convenient, and most importantly tasty. All the ingredients in these healthy recipes will be in your pantry or something you can get from a grocery store without hassle. You will want to dig in right away, take my word for it.

1) PROTEIN PACKED MIXED DAL PANCAKES

This is a great option for vegetarians for their daily intake of protein. Dals are a great source of protein along with other important nutrients but most of us only know one or two ways of incorporating it in our diet. Here is one such unique way to start your day with a kick of protein.

How to Make

For one person, take 2 spoons each of urad dal (split black lentils), masoor dal (red lentils), toordal (split pigeon peas), chanadal (yellow split peas), mung dal (green gram) and 4 spoons of rice in a bowl along with one dry red chili. Add water and soak it overnight or minimum for 4-6 hours. You can use any dal available at home besides these or exclude any if not available.

Next morning, wash the soaked rice and lentils thoroughly. Grind the mixture along with the chili, water, salt, a bit of jeera, sesame seeds, and a bit of red chili powder if you want it extra spicy.Now chop some veggies to add.You can add onions, bell peppers, carrots, broccoli anything you like. If you want a smooth pancake lightly grind the veggies so they are ultra-fine. Just add them to the pot and pulse it once. Add the veggies to the batter already prepared and mix it well. Now the batter is ready add water to make it to the consistency you prefer. Heat a pan, oil it and pour the batter, let it cook and flip it and do the same on the other side. Make sure your pan is hot to make it extra crispy.

Enjoy it with pickle or chutney!

2) GREEN SMOOTHIE ON THE GO

There are days when we are not that hungry but have a busy schedule ahead and need that energy to keep up with. Somedays we are busy and don’t have the time for a proper breakfast. Then this is definitely something to try.

It is the simplest of recipes in the world and will just take 5 minutes to whip up.

How to Make

Just take half a banana or small banana, half apple, half kiwi, a handful of spinach; cut them up roughly and add to the grinder along with some water till smoothie forms. That’s it!

You can substitute the fruits with whatever you have, you can use oranges, avocado, beetroot, watermelon, carrot. Also, you can use coconut water, coconut milk, milk, almond milk, yogurt anything you prefer. If you want it a bit sweeter then go ahead and add honey or jaggery.

Serve it with

You can add chia seeds or nuts for topping. You can experiment with this and find the one that fits you.

3) SAVOURY OATS

You will find tons of recipes for overnight Oats, Oats Upma, etc. This recipe is a bit different as it has a bit of south Asian flavor profile. So, if you want a change in your palate go-ahead for this recipe.

How to Make

Take ½-1 cup of instant or rolled oats, whichever is in your pantry. Cook it to how you would cook normally with water. Add seasoning like salt, pepper, a dash of soya sauce, a little bit of chili sauce, very little though. You can add any other seasonings you like.

Take veggies of your choice like mushrooms, spinach, bell peppers, capsicum, onion, broccoli, carrots, beans, anything you like. Sauté them with some oil, season it with salt, pepper, soya sauce, or anything you prefer.

Take a bowl and plate up your oats and veggies. The veggies will release some sauce. Mix it up well.

Serve it with

You can top it off with a soft-boiled egg or fried egg. Also, you can use favorite nuts as toppings.

4) SHAKSHUKA

I know it sounds a bit odd and more like a spell. This is basically just poached eggs in tomato sauce. It has its origin from North Africa and Israel. It is a perfect detour from your boring everyday breakfast. This is a perfect fail-safe breakfast idea to experiment with. You can surprise your family and friends with this one healthy breakfast recipe.

How to Make

For one person, take about 3-4 tomatoes, blanch them, remove the skin. Let it cool down and then grind them till it forms a smooth paste. Chop one onion, 3-4 cloves of garlic, one red bell pepper. The original recipe doesn’t use any other veggies but you can add if you feel like it.

On a deep-dish pan heat up some oil, add onions, garlic and the pepper and cook for 5-10 minutes. Then add the tomato puree, cook it for 2-3 minutes then add water and  add spices like turmeric, cumin powder, red chili powder, paprika if you want. make sure to add cumin powder a bit more as it is very important for this dish. Season it with salt and pepper. Then mix it all. Let it bubble away for 10-15 minutes.Make two holes in the pan, crack two eggs in each of them and cover the pan. Let it cook for about 3-5 mins and its ready!

Serve it with

You can serve it as is or garnish it. Enjoy your hearty and healthy breakfast with some crusty bread!

5) HUNG CURD SANDWICH

This a perfect refreshing breakfast option when bored of spicy, salty food. A perfect option for hot summery mornings when all you want is a cooling option with no heat.

How to Make

To prepare the hung curd just take normal curd in a wet cloth and squeeze the water out of it till curd with a thick consistency remains. Refrigerate it for an hour. You can use Greek yogurt if you like.

For the filling, grate one cucumber and carrot, to this add one cup of hung curd or Greek yogurt with some salt and pepper. You are free to add mayonnaise if you like. Take two slices of bread and spread the filling.You can cut the edges if you like or grill it or have it asis. It’s your choice.

You can have it with your favorite dipping or simply tomato ketchup. A perfect morning go-to for the summery days, enjoy!
